The Global Landscape of Food

On March 1, 2022, students from the University of Illinois & Hobart and William Smith Colleges were given the opportunity to learn from Chef Cristina Bowerman of Glass Hostaria and Laura Offeddu, former manager of the Rome Sustainable Food Project during the mini symposium “The Global Landscape of Food” at Borromini Institute.

 

Students then joined a discussion moderated by Prof. Elizabeth Simari about local and global marketing of Italian food (including the role of international organizations like the American Academy in Rome in supporting sustainable local food).
