Academic Internship dates: November – December, 2020 (TBC, 4 weeks)
This program is entirely online and includes two courses and an academic internship. The courses run from November to December (5 weeks, TBC) while the academic internship runs from November to December, 2020 (4 weeks, TBC). Participants are free to choose or can take all three elements as a unit.
Who can apply?
University students (both undergraduate and graduate) and independent professionals from all fields of study. They will be particularly suitable to those interested in food studies, food systems, sustainability, environmental studies, cultural tourism, gastronomic studies, food heritage, sustainable hospitality, agribusiness, nutrition and food science.
Courses will be taught in English. Some elements such as virtual tours may be in Italian with English translation. Participants who complete all academic components of the courses may request to receive an official transcript from Portland State University (PSU), our School of Record (SOR). Courses include:
- Critical Studies on Food: Food is presented in all its complex connections with culture, nutrition, environment, society, economics and politics. Topics include practical activities such as cooking workshops. Lectures are delivered by experts providing a dynamic and interdisciplinary learning environment.
- Food, Nutrition and Culture in Italy: This course focuses on how culture and ethnicity affect dietary practices, with particular emphasis on Italy as compared to the U.S. The influence of politics on food availability and food practices is explored. Emphasis is on cross-cultural communication processes to address nutrition and cultural issues.
Our academic internship is unique and designed to help students gain an international working experience while learning Italian as well as specific topics such as intercultural communication. The student’s time is divided between the working and the learning experience. During the working experience, students will work on projects for Italian organizations, focus on the food, sustainability & related fields, have the possibility to work in teams, and receive mentorship through weekly check-ins. During the learning experience, students will gain knowledge through short independent learning modules about food & sustainability, connect with professionals and peers through virtual sessions, workshops, and discussions, receive Italian language instruction with an instructor, have the support of a learning facilitator in their online & cross-cultural learning experience, learn to narrate and think critically about their entire experience by completing graded assignments. At the end of the program, students will present their experience in a virtual symposium. Knowledge of a second language or familiarity with the Italian language is helpful but not required. Internships are unpaid.
