Gustolab International has participated in various academic and research projects that have culminated in publications. Below are some examples: 

 

 

ALIMENTAZIONE, LA SFIDA DEL NUOVO MILLENNIO”

The Italian version of the book ‘Alimentazione, la sfida del nuovo millennio’ Gangemi Editore SpA is now published (in the ebook and soft copy version). Gustolab International Food Systems and Sustainability designed and managed the project ‘L’arte racconta il cibo che mangeremo’ within the book by working with more than 20 authors who contributed towards it. Additionally, the book contains a chapter by Gustolab International’s former academic director Dr. Massari and Carlo Alberto Pratesi entitled ‘Cibo e Città: Creatività e retro-innovazione’.

“Intercultural Horizons – Best Practices in Intercultural Competence Development”

Alessandra Ciattaglia and Flavia Franco, collaborated as part of an internship project in this project.

“Food and Art”

More than 20 authors contributed in this project. The idea for the project came from an observation that art and science do not often communicate with each other and by asking the questions: Can art be a means to create a unique type of communication addressed to different audiences? Can art, in the hands of scientists become an instrument of disclosure and information? Can art help mankind to understand how to undertake sustainable diets? From this: an international call entitled ‘Food&Art’ was launched in July 2014 where we asked experts in Food Studies, gastronomy, chemists, economists, dietitians, professors, students and activists (and more) to write contributions based on images where food is the protagonist. The call ended in January 2015. After a selection of the contributions, Gustolab International worked with the editor to translate the work in Italian. Additionally, the book contains a chapter by Gustolab International’s former academic director Dr. Massari and Carlo Alberto Pratesi entitled ‘Cibo e Città: Creatività e retro-innovazione’.

RESULT: “L’arte racconta il cibo che mangeremo” within the book, ‘Alimentazione, la sfida del nuovo millennio’ (Nutrition: The challenge of the new millennium).
